Garlic Ginger Roasted Green Beans

Okay, so I’m all about an “easy” recipe, but yall… this is more than easy. These Garlic Ginger Roasted Green Beans come together in minutes, and the garlic, ginger, oil mixture that I use can be used on any and all veggies you’re wanting to roast up. I put this same mixture on cauliflower when I was testing it and boy oh boy! This recipe uses fried chili oil, but if you don’t have that, you can use sriracha. I love that you can adjust the spiciness for your audience. I served these with some honey glazed cauliflower so I went a little heavy on the spice, and the combo was so delicious.

STEP 1: Peel the garlic and ginger. Mince the ginger, I use a zester/microplane and a garlic press for the garlic.

STEP 2: add the oils to the garlic/ginger combo and stir to combine.

STEP 3: Coat the green beans and set aside until you’re ready to roast and serve.

I love these because you can prep everything ahead of time, and then assemble and roast whenever you’re ready to go. GARLIC GINGER ROASTED GREEN BEANs

 

INGREDIENTS

1lb green beans (or any other veggie you like)

1 tablespoon sesame oil

1 tablespoon olive oil

1 tablespoon soy sauce (reduced sodium)

1 teaspoon chili oil (scale up or down for desired spiciness)

1 inch fresh grated ginger

3 garlic cloves minced

INSTRUCTIONS

Preheat your oven to 450º F. Line a cookie sheet with parchment, add your green beans, and set aside.

Start by mincing the ginger and garlic. I like to use a fine grater/zester and a garlic press.

Next, to the ginger and garlic, add the oils, soy, and chilis (or sriracha).

Stir until combined.

Pour this mixture over your beans and toss until well coated.

Roast the green beans for 30 minutes. Then turn your broiler on to “HI”. Broil the beans from 3 to 5 minutes. Watch the beans closely, all broilers are different.

The beans should be roasty toasty and delicious. Serve warm and enjoy!
