Snap, Crackle Let's Get Things Popping'!

I'm a HUGE rice krispies fan. THE BIGGEST. I love cake, if you know me, you know that's true. But second to cake (and maybe ice cream) are rice krispies of any and all flavors. I do not discriminate when it comes to cereal held together with marshmallows. Am I alone in this? How would you rank your desserts... I know I ask the tough questions. 

Let's talk about the inspiration for this recipe. Tyler and I are big road trip people. We love being on the open road with a great playlist and a bag full of snacks. When we were in Virginia we spent every weekend we could exploring the hills of Virginia and the Shenandoah Valley region. Sometimes hiking, sometimes just driving Skyline Drive.

Now that we're in Texas, we spend most weekends on IH-10 to to San Antonio or Highway 59 headed to Yorktown – that is, when he's not studying. On both of these Texas roads you'll find a little place called Buc-ee's. If you've never been to Buc-ee's you can't know the obsession that is Buc-ee's.. The snack selection at Buc-ee's. can be a tad overwhelming. I used to always go for the licorice, but now that I've experienced Buc-ee's with Tyler, I know that I had not fully experienced Buc-ee's.  

Tyler's go-to snack at Buc-ee's is a rice krispie with 50% normal rice krispie and 50% fruity pebble. One time while he was taking a big bite out of his road-trip snack he looked over at me and said "You know what? I think we could make this ratio better. It's too strong on the pepples. Do you think you could make these with a little less fruity-ness?" Of course I obliged and came up with these Fruity Pebble Rice Krispie Treats. 

I love making these and taking them to a potluck or for a housewarming gift. To fancy them up I dip them in white chocolate and crystal sprinkles. Aren't they just precious? They're so delicious too! They're super sweet when you dip them in the white chocolate so I like to cut them in to narrow, 2-bite strips. 

 

Fruity Pebble Rice Krispie Treats

 

INGREDIENTS

3 cups Rice Krispies

2 cups Fruity Pebbles

4 tablespoons salted butter

1 teaspoon vanilla

10 oz marshmallows

[optional]

white chocolate melts

sprinkles

INSTRUCTIONS

Spray a 8x8 baking pan with cooking spray

Combine Rice Krispies and Fruity Pebbles

In a heavy bottom pan, melt the butter until just browned on medium heat

Lower the heat and add the marshmallows

Melt the marshmallows until smooth

Turn off the heat and add the vanilla

Add the Fruity Pebble mixture and stir until combined

Quickly pour into baking pan and press into the corners/until the Fruity Pebble Rice Krispies are packed and even

Let cool slightly - but not all the way - and then turn the pan over on to a parchment lined cutting board. Do not remove the pan, but make sure all of the mixture has released from the bottom. Let sit until set.

Slice and serve or decorate with white chocolate and sprinkles!

While the Fruity Pebble Rice Krispies are setting, melt the white chocolate

Slice the Fruity Pebble Rice Krispies into 2x4 in strips

Dip the strips in the white chocolate and then into the sprinkles

Let set until chocolate hardens

Now you've got something you want to serve and enjoy!
